the climate is mild. the rainfall is regular. the grazing season is long. the cows live on grass for most of the year, and the grass itself is deep and slow-growing. that is what makes the milk what it is.

the gold in the cream comes from carotene, drawn up out of pasture and into the milk. it is only ever as good as the field it came from. that is the whole quiet argument.
