house of aurea

AUREA
made in cool english light. kept in the warm gulf home.
deep gold. nutty. caramelised.
a ghee for the table you set for the people you love.
the first homes are being gathered. leave your email to hear when the first batch is ready.

by invitation
the first homes.
the first production is intentionally limited. because exceptional ingredients deserve patience, and we would rather produce less than compromise where our milk comes from.
- priority access before the public release.
- access to the first production.
- early access to future house of aurea releases.

one ingredient.
cow's milk butter. ghee is butter, clarified slowly until only the deep gold remains. we make it the long way. a small first batch, made in england, kept for the gulf home.
the ingredient
the ingredient list is one line.
- no palm oil. nothing blended, nothing stretched.
- no colourings. no annatto, no beta carotene. the colour belongs to the milk.
- no preservatives. the making is the preservation.
- no flavourings. the flavour is the point.
- no processing aids. nothing touches the butter that does not belong in the jar.
upstream
what is in the ghee?
what is in the ghee?
cow's milk butter. nothing else.
what is in the butter?
cream, churned from fresh milk.
what is in the milk?
this is where the answer stops being short.
the milk is taken in spring and summer only, when the pasture is at its richest, and the butter is kept from that season alone. every jar of aurea is made from the year at its height. the gold is a record of the season.
the label is one line because everything that matters happens upstream. we spent our effort on the milk so there would be nothing to add after it.
the one you reach for.
the gulf has always brought the finest of everything home. this is simply the fat.

it takes the heat that would scorch butter and turns it to flavour instead. nutty, faintly caramelised, the kitchen warm with it before a thing reaches the table.

the land.
the finest dairy needs the right ground. cool, wet, green nearly all year, so the cows graze far more of it.
provenance
why england?
because extraordinary ghee begins long before butter is clarified. england's protected dairy heartland has been respected for generations for its dairy.
climate
mild.
cool, even air. no extremes to stress the herd.
rainfall
regular.
steady through the year. the grass stays long and green.
grazing
long seasons.
cattle live on pasture for most of the year.
everything begins with the milk.
the standard comes first.
made in small numbers, so every jar tastes like the last.

early access
the first release.
our first production will be released exclusively to the waitlist before the public launch.
once the first release has sold through, production returns to the pace our standards allow.
